Happy Pancake Day! Or Shrove Tuesday if you prefer that name!
I thought I’d better post a couple of photos as it’d be rude not to wouldn’t it… hahah! I sort of feel like this Pancake Day came around really quickly?! I remember last year I got it wrong 3 times before getting the right date – and there’s only 4 Tuesdays in the month! Hahah.
Once I got home from work we whisked up a batch of our thick, american-style pancakes. My really easy recipe for them is as follows:
For 4 good sized pancakes;
• 1 egg
• 1 cup of self raising flour
• 1 cup of milk
• A pinch of salt
Whisk it all together in a bowl and add 1-2 ladle scoops into a hot pan! For one of mine I added blueberries at this point – yummy!
*(By ‘cup’, I mean one literal cup/mug – you don’t need to convert the measurements haha!)*
Add your favourite toppings and enjoy! We added banana, strawberry, raspberry, blueberry, golden syrup, ice cream, fresh lemon juice and we even made some homemade cinnamon sugar :))
Jax loved his star shaped pancakes (I’m loving that star cookie cutter aren’t I, I think I’m going to have to invest in some other shapes haha!)
I hope you’ve had a yummy Pancake Day! What’s your favourite toppings?
Love, J xxx
